Mardi Gras-Food (UW-Waukesha Continuing Education)

Don’t forget to wear your beads! While Mardi Gras conjures up images of revelers in New Orleans the observance of Mardi Gras translates into “Fat Tuesday” observed in most Christian countries.  Mardi Gras falls on the Tuesday prior to ash Wednesday and the Church dictates that meat and dairy consumption is forbidden during the period of Lent, meaning anyone who had stores of meat and dairy products, before the advent of safe storage for perishable items, needed to use them up by the end of Mardi Gras. So tonight we join in and eat in celebration as we sample some traditional Mardi Gras favorites such as beignets, roast beef Po’boys with Debris Gravy, Cajun Chicken & Sausage Gumbo and King Cake and also included is a recipe for a Hurricane you can enjoy at home!
